  • Sesame seeds (Roasted)

Now, knead the dough with flour, melted ghee, and milk. Now take out small portions of dumplings from the dough. Roll out the smaller portions, fill them with the stuffing and make the Gujiya dumplings. Make sure that you do not stuff too much filling into it. Heat oil or ghee in a pan and fry the gujiyas. Serve at room temperature.

Ghughra

Another Indian sweet marvel from Gujarat. These are made by preparing a mixture of rava, coconut, and dry fruits. This stuffing is then put into flour pasties and fried. And in a healthier option, you can skip using in the stuffing and rather use a natural sweetener like molasses. Also, unlike the traditional ghugras are coated in sugar syrup, you can opt without the sugar syrup one.

How to make Ghughra?

Ingredients:

  • Flour (for patty)
  • Grated coconut
  • Milk
  • Dry Fruits
  • Rawa
  • Cardamom Powder
  • Sugar/ Stevia/ Molasses
  • Oil or Ghee

Ghughra Recipe:

Heat ghee in a pan and slightly roast the grated coconut in it. Finely chop all the dry fruits. Mix them with the grated coconut. Add sugar, cardamom powder, and roasted rawa in it. Now, knead the dough with flour, melted ghee, and milk. Now take out small portions of dumplings from the dough. Roll out the smaller portions, fill them with the stuffing and make the Gujiya dumplings. Make sure that you do not stuff too much filling into it. Heat oil or ghee in a pan and fry the gujiyas. In another pan make a little sugar syrup and dip the fried Ghughras or Gujiyas in it. Let it cool down and then serve at room temperature.

Nevri

Now, you can never imagine Goa serving gujiyas. But, Nevri is Goa’s very own gujiya. It is very much prevalent within the Goan Hindu families. It has a stuffing of sugar, poppy seeds and cardamom. Unlike the entire country, Nevri is prepared during Ganesh Chaturthi.

How to Prepare Nevri

Ingredients:

  • Flour (to make the dumplings)
  • Milk
  • Poppy seeds
  • Grated Coconut
  • Cardamom Powder
  • Sugar/ Stevia/ Molasses
  • Oil or Ghee

Nevri Recipe:

Mix together grated coconut, sugar, cardamom powder, and poppy seeds.

Now, knead the dough with flour, melted ghee, and milk. Now take out small portions of dumplings from the dough. Karjikayi

  • Rice Flour
  • Water
  • Roasted Gram Dal

Karjikayi Recipe:

Mix together grated coconut, sugar, cardamom powder, and roasted gram dal.

Now, knead the dough with flour, rice flour, melted ghee, and water. Now take out small portions of dumplings from the dough. Roll out the smaller portions, fill them with the stuffing and make the Karjikayi dumplings, shaped as crescent moons, sealed properly. Make sure that you do not stuff too much filling into it.
